Tuscan Inspired Chicken Soup

A hearty chicken soup with gnocchi for a cold winter day.
Ingredients
- 1-2 Boneless Skinless Chicken Breasts (cubed/diced/chunked)
- 1-2 Cups Chicken Stock
- 1 tsp Garlic Powder
- 1 tsp Garlic Salt
- 1 tsp Onion Powder
- 1 tbsp Tuscan Seasoning
- 1 can Cannellini Beans (White Beans) rinsed
- ½ Sweet Onion (diced)
- 2 Carrots (peeled and diced)
- 1-2 Cups Gnocchi
- 1 tbsp Olive Oil
- 2 ears of sweet corn shucked and sliced from the cob (optional)
Steps
- Place olive oil and chicken in pan with seasonings and sear, add onion and carrots.
- Once chicken is seared add chicken stock to deglaze, corn (optional), tomatoes (also optional).
- Bring to boil and taste to see if additional seasoning is needed.
- Add Gnocchi, stir, and reduce heat then simmer for approximately 20 minutes.
Notes
As with all my recipes seasonings should be to taste, don’t be afraid to add or remove seasoning as desired.
Serve with rustic sourdough or olive bread.
